It's not strictly landscape photography per se, but Prompto's hobby is photography, and every now and again at interesting scenery he yells at you to pull over and take a group photo, and I found that fun. There's also a side quest chain with some, like, tabloid reporter who sends you to take photos of various things (in the Royal edition, IIRC) and I think you *can* just run around taking photos, although there are limits to how many you can store. I guess the way around *that* is to screenshot and offload those from the PS? Or if you're playing on PC it's probably easier, lol.
